Recipe: Wild Rice Summer Salad

Yum!

I made this for DH and I tonight for dinner and it was delish! Definately worth trying out.

Wild Rice Summer Salad
(yields 6 servings)
from The Eat Clean Diet Cookbook

ingredients:
1c wild rice (i used red rice)
4 Tbsp rice vinegar
1 Tbsp toasted sesame oil
1 clove of garlic, pressed
1c cooked boneless, skinless chicken (could use turkey, tofu, etc)
1 medium tomato, seeded & diced
1 bunch scallions (i cooked down some red onion instead, yum!)
1/3 c edamame, cooked
1/2 c corn kernels, cooked
1/2 tsp tarragon, minced
1/4 c fresh basil, chopped
1/2 tsp sea salt
1/2 tsp black pepper

1. cook rice according to package. Set aside to cool.

2. In small bowl, mix vinegar, oil & garlic to make dressing. whisk.

3. In medium bowl mix rice with rest of ingredients, add dressing and toss til well combined.

I think this would be really yummy with some kalamata olives thrown in!

And here are the nutrition details:
per serving... cal: 202, fat: .1g, protein: 8g, carbs: 32g, fiber: 2g, sugars: 5g, sodium: 467

I also ran the recipe through the Weight Watchers recipe thingy do dah and it calculated it to be 3 points per serving!!!
